Great Fall Salad

Apple Walnut Salad with Maple Dressing

Maple Dressing:

• 1/4 cup light mayonnaise
• 1/4 cup pure maple syrup
• 3 Tbsp white wine vinegar
• 2 tsp brown sugar
• 1/3 cup vegetable oil

Whisk mayonnaise, maple syrup, vinegar and sugar in a medium bowl to blend. Gradually whisk in oil until mixture thickens. Season to taste with salt and pepper.

Salad:

• 8 oz. bag of mixed baby greens
• 2 granny smith apples, peeled and cut into matchstick strips
• 1/2 cup dried tart cherries (dried cranberries work well, too)
• 3/4 cup toasted walnuts, chopped
• 1/4 cup feta cheese, crumbled

Toss greens, apples, cherries and walnuts in a large bowl with a few tablespoons od dressing (just enough to lightly coat). Pour remaining dressing over salad and sprinkle with crumbled feta before serving.

O gods yes. I was searching for the peanut butter the other day when I sliced up a couple of green apples for a snack. All I found was the nutella and I assume that that wouldn't be anywhere near as good.

When I lived in Norcross, GA, my neighbor Tunny turned me on to Southern-fried apples, both as a breakfast (on top of waffles) and as a dessert (e.g. with a dollop of melty ice cream on top):

• 12 apples (your favorite sweet variety), peeled and cut into wedges
• Tbsp lemon juice
• 4 5 Tbsp cinnamon sugar (to taste)
• 1 Tbsp butter or margarine

1. Lightly coat the apples slices lemon jiuce as you cut them (staves off browning).

2. Melt butter in a large pan and add apples. Sprinkle with cinnamon sugar and blend/coat over medium heat for about 5-6 minutes.

3. Cover pan and low simmer another 12 minutes or so (stir/flip occasionally), until the apples wedges are fork tender (not mushy)
