 Apple Walnut Salad with Maple DressingMaple Dressing:• 1/4 cup light mayonnaise • 1/4 cup pure maple syrup • 3 Tbsp white wine vinegar • 2 tsp brown sugar • 1/3 cup vegetable oil Whisk mayonnaise, maple syrup, vinegar and sugar in a medium bowl to blend. Gradually whisk in oil until mixture thickens. Season to taste with salt and pepper. Salad:• 8 oz. bag of mixed baby greens • 2 granny smith apples, peeled and cut into matchstick strips • 1/2 cup dried tart cherries (dried cranberries work well, too) • 3/4 cup toasted walnuts, chopped • 1/4 cup feta cheese, crumbled Toss greens, apples, cherries and walnuts in a large bowl with a few tablespoons od dressing (just enough to lightly coat).
